Healthy Chocolate Orange Fudge

When I was younger, I loved visiting the fudge kitchen in Cambridge. I’d nip in telling myself I was just going to get a freebie sample, and then buying a huge slab of the latest flavour. Well, when I made these, they did not turn out how I expected, they turned out like a gorgeous chocolatey fudge. Ridiculously moreish, but with only a tbsp of maple syrup and cocoa powder in the whole lot, all the rest of the sweetness come from 12 dates! What is not to like?
I popped them in the freezer, thinking that would stop me munching on them, but no!! They taste even better straight out of the freezer. #chuffed
The recipe is -
- 12 pitted dates
- 50g hazelnuts
- 1/2 cup of oats (I used gluten free)
- 1 scoop of vanilla protein powder (optional)
- 2 tbsp of almond butter
- 1 tbsp of high quality cocoa powder
- Good squeeze of half an orange
- 1 tbsp of maple syrup
- 2 tbsp of Linwoods flax seed mix (can be picked out and more oats added etc)
1 - put all the ingredients in a food processor and mix well
2 - scrunch into little balls (adding more almond butter if they are too crumbly)
3 - pop in the fridge to set for 1 hour, or if you like them soft, much away
