Cookie Dough Fudge

Meet Bella, my youngest Viszla. We rescued her from Hungry 18months ago, and have never looked back since. She is nutty, noisy but incredibly loveable. She is always pleased to see us, and loves nothing more to be by my side. So her latest trick is to jump over the garden gate and head round to the studio, sitting at the steps, waiting for one of clients to feel sorry for her and let her in. Today we resorted to tying her up with a skipping rope to the TRX to stop her licking everyone as they stretched!!

She took a fancy to this little recipe.

Here is my recipe

- 2 cups of gluten free oat flour
- 1/2 cup of coconut flour
- 1/2 cup vanilla protein powder
- 30-50g chopped up dark chocolate
- 1/2 cup of almond butter or any other nut butter
- 3 tbsp of maple syrup
- 1-2 tbsp of almond milk or any other milk you fancy

1. Put all the dry ingredients in a bowl and stir well
2. Mix the maple syrup and almond butter in a separate bowl
3. Mix together and add the chocolate. It should be crumbly
4. Now add the milk, 1 tbsp at a time to make it doughy
5. Line a container with cling film and press the mixture into the container and set in the fridge for 30-45min before cutting up and portioning off
6. Keep the rest in an airtight container in the fridge for 1 week or in the freezer
