Chocolate Avocado Cookies

If you are anything like my family, I am always finding ways to sheak a few hidden veggies in, and what better way than to disguise them as chocolate cookies. And, they fell for it hook, line and sinker! Isla loved them as the photo proves. Just need to make them look a little more attractive next.

Here is my recipe

- 2 avocados
- 1 very ripe banana
- 1tbsp of maple syrup
- 1 egg
- 80g of chocolate protein powder
- 50g of 80% plus dark chic cut into small chunks
- 1/2 tsp of bicarbonate soda

1. Peel and remove the stone from your avocado and then cut into chunks
2. Put all the ingredients (accept the dark choc chunks) in the food processor and whizz until well blended
3. Stir in the choc chunks
4. Line a baking tray with baking paper and then put a table spoon full for each cookie on the paper
5. Cook at 175 C for 8-10min, or until the cookie feel firmer but not too hard
6. Pop on a cooling rack to cool and then you can store them in an air tight container in the fridge for 5 days
