Blue Berry Protein cakes

In France they have the most amazing bakeware, from small square bun trays, to shaped chocolate brownie , or bars of healthy fudge. So once back, I was desperate to test them out, and am well chuffed with my new baking trays. The cranberries and dates will help keep your system regular. Add to the mix the eggs and a oat flout, it is also a excellent source of protein

The recipe is -

  • 2 large ripe bananas
  • 8 medfool dates - pitted
  • 1/2 cup of oat flour
  • 3 tbsp of almond butter
  • 1/2 tsp of finer or cinnamon, to boost the metabolic system
  • A handful of fresh blueberries to add to the trays
  • 4 eggs
  • 1tsp of sodium of bicarbonate

1 - Mix the bananas and dates until smooth(ish) in a blender
2 - Add all the other ingredients
3 - Line a loaf tin with baking paper and pour mixture in, or pour in to your preferred shape.
4 - Bake at 170 for 40 to 60min depending on your container - but basically until it is cooked in the middle
