Banoffee Cakes

So tomorrow is cake sale at school and seeing as Elly is gluten free, I thought I’d better attempt something for my lovely clients, but also something that she would enjoy. I have a thing for caramel at the moment, so added some banoffee sauce, only a smidgen, but enough to give the cakes a hint of the taste.
The recipe is as follows (makes about 20 small bars) -
- 1 cup of oat flour (I used gluten free)
- 3 scoops of vanilla protein powder
- 3 tbsp of almond butter
- 3 tbsp of mixed seeds - again whichever you like but I used chia, flax and sunflower seeds
- 6 eggs
- 3 bananas
- 3 tbsp of banoffee sauce
2 - Spoon them into your silicone moulds
3 - Bake at 160 for 30min or until they are cooked through
4 - Cool before the little hands get them
