Protein Brownies

I love a brownie. Locally to us, we have the most amazing brownie maker - Choccolicious. They are divine. I have tried a few healthy brownies in my time, but I wanted to create something that used high protein foods, and as little natural sugar as possible, but still giving it its yummy gooey taste. I have used chocolate protein powder in these, but you could easily swop for cocoa or even better cacao. Cacao is a great ‘pick me up’ if you are feeling low, or fancy something sweet, but without all the sugar and calories. It contains theobromine, which has a similar effect as caffeine.
The recipe is -
- 100g of dates, soaked in hot water for 15min
- 2 tbsp of chia seeds, soaked in 6tbsp of how water for 10min
- 75g of almond butter
- 45g of coconut butter
- 50g of chocolate protein powder
- 20g of ground almond
- 50ml of almond milk (or other milk)
- 1/2 tbsp of vanilla essence
- 1/2 tsp of sodium of bicarbonate
- A pinch of salt
- 2 tbsp of maple syrup
1 - Mix the dates, both butters, milk and maple syrup in a blender until smoothish (some bits of dates in the mix is fine)
2 - Mix the dry ingredients together
3 - Mix the wet and dry mixtures together
4 - Spoon into a lined brownie tray, at about an inch thick
5 - Bake at 175 degrees for 20min
