So today I am feeling like a bad Mummy - Little Elly is gluten free and today at school they made ginger bread men. She was uber excited when she ran out of school to show me what she had made, followed by “Mummy are these glupen (gluten) free?” Her little face when I said no pulled on all my heart strings. So we went home and made up this little gluten free cookie recipe to make up for it, which Isla supervised whilst munching on Elly’s gingerbread men (got to love Elly’s generosity).

The great thing about this little concoction is that it is totally sugar free and rammed full of protein with the oat flour and protein powder, as well as some great fats from the nut butter. I even managed to sneak some extra nutrients in by adding some ground seeds - a Linwoods mix of chia, sunflower and flax seeds. It is super easy and quick to throw together.

For the cookie

  • 1 cup of gluten free oat flour (but you can use coconut flour instead)
  • 2 scoops of vanilla protein powder (you can miss this is out and add a bit more flour and more vanilla essence)
  • 1 egg
  • 1 tsp of vanilla essence
  • 3 tbsp of coconut butter
  • 1 tbsp of peanut butter
  • 1/2 cup of almond milk
  • If you want to add the seed mix, sprinkle a tbsp or 2 in, and you may need a little more milk

For the icing
  • 1 tbsp of coconut butter
  • 1 scoop of vanilla protein powder

1 - Heat up and melt the butters and mix in the vanilla essence
2 - Whisk the egg and in a separate bowl, mix the powders together
3 - add the egg and melted butter and stir until well combined
4 - Now add the milk, a little at a time so it becomes a soft dough
5 - Pop them on a baking tray and squash down flat
6 - Cook at 170 for 15 min, until they are going slightly golden at the edge
7 - Take out of the oven and leave to cool
8 - In a separate bowl melt the coconut butter and mix in the protein powder so that it is spreadable
9 - Once the cookies have properly cooled, spread onto the cookies and devour
